Directions

  • Step one

BISCUITS: Preheat oven to 425°F. Spray large baking sheet with cooking spray.

  • Step two

Pour biscuit mix into large bowl. Cut in 10 tablespoons cold butter using your hands, a pastry cutter, or food processor. Create coarse crumbs of butter and incorporate into the dry mix. Stir in milk using a scoop-down and fold-over motion until soft dough forms. Do not overwork the dough.

  • Step three

Drop biscuits: Scoop dough into portions, about 3 tablespoons each and drop onto baking sheet.

Rolled biscuits: On a floured surface, roll dough to 1/2-inch thickness using a floured rolling pin. FOLD dough in thirds, turn dough 90° and roll out again. Repeat. ROLL dough one final time 1/2 to 3/4-inch thick. Cut out biscuits using a 2-inch biscuit cutter and place on baking sheet.

  • Step four

Bake 9 to 11 minutes, until golden brown. Melt remaining 2 tablespoons butter and brush over hot biscuits before serving.

  • Step five

GRAVY: Heat large skillet over medium heat. Add sausage; cook 10 to 12 minutes until crumbled and browned, stirring occasionally. Remove sausage.

  • Step six

Stir flour into 4 tablespoons drippings remaining in skillet and cook about 2 minutes, stirring constantly. Add milk and cook about 5 minutes until thickened and bubbly. Add additional milk if gravy seems too thick. Add sausage to gravy. Season with salt and pepper. Serve immediately over hot biscuits.
